2 1/2 - 3 c. grated zucchini squash with peel 2 c. grated carrots 1 medium chopped onion 1 box Stove Top stuffing 1 c. sour cream 1 can Cream Mushroom soup Fix stuffing as directed on the box. Cook squash, onions, and carrots in 1/2 cup water. Mix in 1 cup sour cream and cream of mushroom soup. NOTE: You can also use Cream of Celery or Cream of Chicken. Put stuffing in bottom of a 9 x 13 inch pan. Pour zucchini mix over stuffing. Bake at 350 degrees for 45 minutes.
