9 - inch baked pie shell 1 c. sugar 1/2 c. flour 1/4 tsp. salt 2 c. scalded milk 3 egg yolks 2 Tbsp. butter 1/4 tsp. vanilla 1/2 c. flaked coconut Meringue or Whipped Cream Mix sugar, flour, and salt together. Add milk gradually to dry ingredients. Cook in double boiler, stirring frequently (almost constantly) about 10 minutes until mixture thickens. Gradually add slightly beaten eggs yolks, and cook another 3 minutes, stirring constantly. Add butter and vanilla. Fold in coconut. Cool without stirring for about 10 minutes. Pour into pie shell.
