3/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/4 c. Watkins Vanilla Dessert Mix (instant)
1/3 c. sugar
1/4 tsp. nutmeg
3 Tbsp. butter, softened
1/2 c. milk
2 can (14 1/2 - 16 oz. each) canned sliced peaches; drained
(reserve the juice)
1 pkg. reduced - fat cream cheese, softened
1/2 c. sugar
1/2 tsp. vanilla
3 Tbsp. reserved peach juice
1 Tbsp. sugar
1/2 tsp. cinnamon
Spray bottom of a 9 inch deep dish or 10 inch pie plate. In
large mixing bowl, combine the first 9 ingredients. Beat with an
electric mixer at medium speed for 2 minutes. Pour into greased
pan. Set aside 8 large peach slices. Cut remaining peach slices
into 1/2-3/4 inch chunks. Place the drained peach chunks over
batter, keeping peaches about 1/2 inch to 1 inch from the edge. In
a small bowl combine cream cheese and next 3 ingredients, beat
until smooth. Spoon over peaches within same distance from edge.
Combine cream cheese filling. Place reserved peach slices on top
in circular fan design. Bake at 350 degrees for 30 - 45 minutes.
Cool at room temperature. Chill until serving time. Recipe makes
approx: 8-10 servings.
