8 c. ground green tomatoes 6 lb. tart cooking apples 3 lb. seedless raisins 7 1/2 c. firmly packed light brown sugar 7 tsp. salt 1 1/2 c. cider vinegar 1 1/2 c. or (8 oz.) Suet - finely ground 3 tsp. cinnamon 2 tsp. cloves Juice of 2 lemons 2 tsp. ground lemon rind Choose tomatoes that have turned light green. Wash and clean them. Chop fine. Strain liquid off and discard. Add 2 cups of water to the tomatoes. Heat just to boiling point, then drain, then add 2 more cups of water and heat just to boiling; drain. Add 2 cups water, chopped apples, raisins, sugar, salt, vinegar, and Suet. Mix, then cook slowly about 45 minutes. Stir often to prevent scorching. the last 5 minutes of cooking add spices, lemon juice, and rind. Place in hot sterilized jars. Place lids on, add hot water, bring to boil. Boiling 10 minutes.
