1 1/2 c. vegetable oil
2 c. chopped onion
2 c. chopped bell pepper
2 c. chopped celery
2 c. okra
3 lb. peeled raw shrimp
1 lb. raw crab meat
1/4 tsp. thyme
1 tsp. cayenne pepper
2 Tbsp. Worcestershire
2/3 c. flour
4 qt. tomatoes
1 tsp. salt
1 tsp. pepper
1 large can tomato paste
3 pods garlic
3 bay leaves
1/2 tsp. gumbo file
5 c. water
Take one cup oil and put in large skillet; add onions, peppers,
garlic and celery. Cook until tender. Combine all except okra.
In another skillet, put 1/2 cup oil and flour; cook flour until
brown, not burnt. Add to mixture and cook 30 minutes. Add okra.
Reduce heat and simmer 2 hours.
Be careful not to scorch. Serve over cooked rice.
