1 1/2 c. vegetable oil 2 onions 2 bell peppers 1 small stalk celery 3 cloves garlic 2 c. okra 1 can tomato paste 1 large can tomatoes 1 Tbsp. Worcestershire sauce 5 c. water 3 lb. shrimp 2 lb. crab meat 2/3 c. flour 1 tsp. pepper 1/4 tsp. thyme 1 tsp. gumbo file 1 tsp. cayenne pepper Saute onions, peppers, celery and garlic in 1 cup oil until tender. Add all but okra, shrimp and crab. Bring to slow boil; add okra. When okra is done, add shrimp and crab meat. Bring to boil. Add brown flour. Simmer 2 hours. Serve over rice. In skillet, add 1/2 cup oil and 2/3 cup flour. Cook over low heat until flour is brown not burnt.
