1 lb. rice meaty parts of 1 chicken, skinned 1 medium onion, chopped 1/2 bell pepper, chopped 4 buttons garlic, minced 1 qt. tomatoes 1 qt. water 2 bay leaves 1/4 c. vegetable oil salt and pepper 1 can English peas, drained 1 jar pimento, chopped 1 jar sliced mushrooms In large pot, brown chicken in oil. Remove chicken. Cook peppers, onions and garlic until tender. Add tomatoes, water, bay leaves and chicken. Add rice and bring to boil for 5 minutes. Place in oven for 45 minutes at 350 degrees or until rice is done. Remove from oven and top with heated and drained peas, pimento and mushrooms. Serve with salad and hot rolls.
