2 c. cooked shrimp, chopped 3 slices bacon, diced 3 Tbsp. chopped onion 2 Tbsp. chopped celery 2 Tbsp. chopped parsley 3 Tbsp. chopped bell pepper 1 Tbsp. flour 4 c. diced tomatoes 1 tsp. salt 1 tsp. chili powder 3 c. cooked rice 1 c. buttered breadcrumbs pinch of gumbo file Fry bacon; add onion, celery, parsley and bell pepper. Cook until onions are tender. Blend in flour; add tomatoes, salt and chili powder. Simmer uncovered until thickened. Add rice, shrimp and file; pour into casserole dish. Just before serving, top with buttered bread crumbs. Brown slightly under broiler. Serves 6.
