1 green pepper, chopped 1/2 c. onion, chopped 1/2 c. celery, chopped 1 clove garlic, minced 2 Tbsp. vegetable oil 1 (6 oz.) tomato paste 1 1/2 c. water 1 tsp. salt 1 bay leaf 1/4 tsp. thyme 1/8 tsp. black pepper 2 c. cooked shrimp rice, cooked by pkg. directions Cook vegetables in oil until tender. Add tomato paste, water and seasoning. Simmer 15 minutes, stirring occasionally. Add shrimp and heat thoroughly. Serve over rice. Serve with a salad and cracker.
