1/2 c. butter 1 large onion, chopped 3 stalks celery, chopped 2 small bell peppers, chopped 1 lb. Velveeta cheese jalapeno peppers (to taste) 1 (2 lb.) fettuccine, cooked and drained 1 pt. half and half 1 bunch parsley, chopped 1 bunch green onions, chopped grated fresh Parmesan cheese 3 lb. shrimp 2 lb. crawfish tails 1 lb. smoked sausage Saute vegetables in butter; add seafood and sausage and cook, covered 10 to 15 minutes. In large casserole (3-quart), layer cooked fettuccine, seafood, sausage, Velveeta, peppers, parsley and onions. Pour half and half over layers and sprinkle with Parmesan cheese. Bake, covered, at 350 degrees for 45 to 60 minutes. Serves 12 to 16. Freezes well.
