MEAT LOAF


One:
2 lb. ground chuck
2/3 c. bread crumbs or dry oatmeal
1 egg, beaten
1/3 c. chopped onions
1/3 c. bell pepper, chopped
1 tsp. salt (to taste)
1/2 c. catsup
pepper to taste

Two:
10 lb. ground chuck
3 c. breadcrumbs or dry oatmeal
5 eggs
1 2/3 chopped onions
1 2/3 chopped bell peppers
4 tsp. salt (to taste)
2 c. catsup
pepper to taste

Mix all ingredients using your hands. Shape into small meat loaves.
I shape mine oval and about 1-inch thick. Should make 6 to 8. Place
on cookie sheet and freeze. Once frozen, drop in Ziploc bag. You
can cook one or number needed.

Sauce - One:
6 Tbsp. brown sugar
1/2 tsp. nutmeg
2 tsp. prepared mustard
1 c. catsup

Sauce - Two:
1 1/3 c. brown sugar
2 1/2 tsp. nutmeg
1/3 c. prepared mustard
