1 eggplant 1 egg 1/2 c. milk self-rising flour oil salt and pepper to taste Do not peel. Slice thin. Slice eggplant into circles; salt and pepper. Beat egg and milk together in bowl. Put flour in another bowl. Coat eggplant with flour, then into egg wash, and back into flour. Drop into hot oil. Cook until golden brown.
