8 squash, washed and sliced 1 onion, sliced 1 tsp. salt and pepper to taste 2 Tbsp. vegetable oil 1 Tbsp. sugar Place squash in saucepan. Top with sugar, oil, onions, salt and pepper. Cover and let stand 30 minutes. Cook on medium, stirring about every ten minutes. Remove top after 30 minutes and let cook 10 minutes. To freeze, cook as directed. Pour in colander to remove liquid. Cool. Put in freezer bags. Thaw and put in saucepan without top. Let liquid evaporate. Serve or use in squash casserole.
