6 medium potatoes, baked (best to bake and let set for 3 to 4 hours in refrigerator or overnight) 1/4 c. oleo 1 c. chopped onions 1/2 c. sour cream 1 tsp. salt 1 Tbsp. chopped parsley shredded Cheddar cheese Slice potatoes in half and scoop out potato (be careful not to tear jacket). Mash potatoes until smooth. (Reheat potatoes in microwave; mash easier.) In skillet, melt oleo. Add onion and cook until onions are tender. Mix all ingredients except cheese. Fill potato jackets with mixture and top with cheese. Place in oven on 350 degrees for 10 minutes before serving.
