4 c. sweet potatoes, peeled and diced 1 c. butter 2 Tbsp. lemon juice 2 c. water 2 c. sugar 1/2 tsp. salt 1 tsp. nutmeg 1 Tbsp. cornstarch Place potatoes, butter and water in boiling pot. Bring to a boil; add sugar, lemon juice, salt and nutmeg. Mix cornstarch into 1/2 cup cold water; add to potato mixture. Boil 10 minutes. Pour into baking pan and bake at 350 degrees for one hour.
