1/4 c. chopped onions 1 Tbsp. butter 2 pkg. corn muffin mix 1/2 c. sour cream 1/2 c. shredded Cheddar cheese Saute onions in butter until tender. Set aside. Prepare muffin mix according to package directions; fold in onions. Fill greased or paper-lined muffin cups 2/3 full. Combine sour cream and cheese; drop by rounded teaspoons onto each muffin. Bake at 400 degrees for 15 to 20 minutes or until toothpick inserted into muffin comes out clean. Cool in pan 5 minutes before removing to wire rack to cool. Makes 12.
