1 c. shortening 1 1/2 c. sugar 2 eggs 3 to 4 ripe bananas, mashed 2 c. all-purpose flour 1 tsp. soda 1/2 c. buttermilk 1/2 c. chopped pecans Cream shortening and sugar; add eggs and mix well. Stir in bananas. Add dry ingredients alternating with milk (start with dry ingredients and ending with dry ingredients). Stir in pecans. Using 2 loaf pans, spray pans with vegetable oil spray with flour. Bake at 300 degrees for 1 hour. Let set 10 minutes before turning out and placing on cooling rack.
