BUTTERMILK COCONUT PIE

(Makes 1)

1 1/2 c. sugar
2 Tbsp. flour
1 stick margarine, melted
3 whole eggs, well beaten
1/2 c. buttermilk
1 tsp. vanilla
1 (3 1/2 oz.) can Angel Flake coconut
1 (9-inch) pie shell

Mix flour with sugar. Add well beaten eggs, margarine, buttermilk,
vanilla and 2/3 can of coconut. Mix well. Pour into unbaked 9-inch
pie shell. Sprinkle remaining coconut over pie. Bake at 325 degrees for
about one hour.
