1 1/3 c. shortening (butter flavored) 2/3 c. confectioners sugar 1/2 tsp. vanilla 2 1/4 c. all-purpose flour 1/8 tsp. salt 1 c. finely chopped pecans confectioners sugar In large bowl, cream shortening and sugar until fluffy; add vanilla. Add flour, salt and pecans; mix well. Cover and refrigerate for at least 2 hours. Preheat oven to 325 degrees. Shape dough into 1-inch balls. Place on ungreased cookie sheet. Bake at 325 degrees for 25 minutes. Roll warm cookies in confectioners sugar. Place on cooling rack.
