1 c. buttermilk 2 c. sugar 1 tsp. baking soda 2 Tbsp. white corn syrup 2 Tbsp. butter 1 tsp. vanilla 1 c. chopped pecans Combine buttermilk, sugar and soda. Let stand 5 minutes. Add corn syrup and cook, stirring constantly until mixture forms soft ball in cold water. (I use a candy thermometer.) Add butter, vanilla and nuts. Beat until it cools to a consistency that will hold its shape. Spoon onto buttered wax paper. Note: The mixture is white but will turn caramel color when cooked. It makes approximately 25 pieces.
