2 medium onions, chopped 1 large green pepper, chopped 1 can Ro-Tel tomatoes 1 large can diced tomatoes 1 lb. bacon, fried crisp and crumbled pot of cooked grits (approximately 1 to 1 1/2 c. raw grits) 1/4 c. oil Cook grits as directed on box except if it says 5 minutes, cook 15 minutes. Triple the cooking time. I use 1 cup grits to 5 cups water. Most undercook grits. Cook onions and bell pepper in a small amount of oil until tender. Add tomatoes and simmer 20 minutes. Optional: You can add a small amount of browned flour to give it some body. Combine grits and mixture in crock-pot and top with bacon. Serve with eggs and hot biscuits.
