1 lb. bulk sausage 3 c. hot cooked grits 2 1/2 c. shredded Cheddar 1 Tbsp. butter 3 eggs, beaten 1 1/2 c. milk 1 small can chopped green chilies Preheat oven to 350 degrees. Cook sausage until brown; drain. Spray a 13 x 9-inch baking dish with vegetable spray. Combine grits, cheese and butter, stirring until cheese and butter melts. Combine eggs, chilies and milk; stir into grit mixture and pour over sausage. Bake 1 hour at 350 degrees. Can make the night before; refrigerate and cook the next morning.
