1 envelope gelatin
1/4 c. cold water
1 c, mashed avocado
1 Tbsp. lemon juice
1 (0.6 oz.) pkg. Italian salad dressing mix
1 pint sour cream
3 Tbsp. chopped parsley
2 or 3 drops green food coloring (if desired)
Oil a 9-1/2 inch dish. In a small pan sprinkle gelatin over cold
water and let dissolve for five minutes. Cook over low heat til
dissolved. In processor or blender, blend other ingredients. Add
gelatin and mix well. Stir in food color. Pour mix into mold and
cover with plastic wrap. Refrigerate until firm. (Can be made 2
days in advance) Unmold, garnish, serve with bread or crackers.
