1 pound fresh or frozen shrimp 1 egg 1 Tbsp. cornstarch 1 tsp.dry white wine 1/2 tsp. light soy sauce 1/4 tsp. salt Vegetable oil (for frying) 1/2 cup flour 1/2 cup water 3 Tbsp. cornstarch 1 Tbsp. vegetable oil 1/2 tsp. soda 1/2 tsp. salt Remove shells from shrimp (if frozen, do not thaw;peel under running water)Mix first 5 ingredients in glass bowl. Stir in shrimp; marinate 10 minutes (covered in refrigerator). Heat 1-1/2 inches of oil in wok to 375 degrees. Combine rest of ingredients. Stir shrimp in batter til well coated. Fry 5 to 6 shrimp at a time, turning occasionally, 2 to 3 minutes. Drain on paper towels. serve with hot mustard or a sweet and sour sauce.
