4 eggs, separated 4 to 5 oz. shrimp, cooked and finely chopped 2/3 c. cooked pinto beans, mashed well 1 Tbsp. flour Salt and pepper to taste Oil for frying (1/2 inch deep) Beat egg whites till stiff. Lightly beat egg yolks; add shrimp, beans, flour,salt and pepper. Fold into egg whites. Spoon enough of mixture to make a 2-1/2 to 3 inch patty and fry on both sides till golden brown. Oil should be about 375 degrees. Optional: Serve in red chili sauce.
