ORIENTAL SHRIMP SALAD

1 can bean sprouts, drained or 2 c. fresh sprouts
2 c. cooked shrimp
1 c. chow mein noodles
1 (5 oz.)can water chestnuts, drained and minced
1/4 c. mined green onion
1/4 c. mined celery

Cook fresh bean sprouts in boiling, salted water 2 to 3 minutes.
Drain. If using canned sprouts, rinse in cold water. Chill bean
sprouts after rinsing. Combine rest of ingredients. Add Soy
Mayonnaise; toss to coat. Serves 4 to 6.

SOY MAYONNAISE
3/4 c. mayonnaise
1 Tbsp. lemon juice
1 Tbsp. soy sauce
1/4 tsp. ground ginger

Mix ingredients thoroughly.
