1 pound of English cucumbers 1 c. crab meat 1/4 c. rice vinegar 1 Tbsp. sugar 1 tsp. sesame oil 2 thin slices fresh ginger, minced toasted sesame seeds Peel cucumbers, halve lengthwise, remove seeds and slice. Combine cucumber and crab. Combine vinegar, sugar, sesame oil and ginger. Pour over crab mixture and toss to combine. Chill. Toss again before serving and sprinkle with toasted sesame seeds.
