2 c. hard red winter wheat berries,cooked 1 (8 oz,) pkg. cream cheese 6 Tbsp. lemon juice 1 large instant vanilla pudding mix 1 tall can of crushed pineapple 1 medium (12 oz.) Cool Whip Soak wheat overnight(approximately 8 hours). Cook for 2 hours or until tender. Drain and cool. In a separate bowl, mix cream cheese, lemon juice and instant dry pudding mix. Add crushed pineapple, juice and all. Add wheat and Cool Whip. Note: Red winter wheat berries can be purchased at almost any store that sells bulk foods. I measure the wheat after it has been cooked and freeze any extra in 2 cup packages for future use. This is a wonderful salad and everyone asks for the recipe.
