1/2 c. fine ground bulgur wheat
1 c. finely chopped onion
1 tsp. salt
1/4 tsp. freshly ground pepper
1-1/2 c. finely chopped parsley
1/3 c. finely chopped fresh mint
1/4 c, olive oil
1/4 c. lemon juice
3 chopped, seeded tomatoes
Soak wheat in cold water to cover until softened, about 20 mintues.
Place wheat in large bowl. Mix in onion. Add salt, pepper,
parsley, mint and oil. Mix well. Add lemon juice, salt and pepper
if necessary. Refrigerate until serving. Mound wheat mixture in
shallow bowl or on platter. Surround with lettuce.
