3/4 c. oil
1/4 c. lemon juice
2 cloves garlic (minced)
1/2 tsp. salt
2 tsp. pepper
2 bunches (1 lb. each) romaine lettuce, torn
2/3 c. toasted slivered almonds (optional)
2 c. chopped tomatoes
1 c. (4 oz.) shredded Swiss cheese
8 strips bacon, cooked and crumbled
1/2 c. Parmesan cheese
1 c. Caesar salad croutons
In jar with a tight fitting lid, combine oil, lemon juice, garlic
salt and pepper. Shake well. Chill. In a bowl, toss romaine,
tomatoes, cheese, almonds, parmesan cheese and bacon. Shake
dressing and pour over salad and toss. Add croutons at last.
Chill at least 3 hours. 14 servings.
