3 c. minute rice
1/2 c. diced celery
1/2 c. diced green onions
1/2 c. diced green pepper
1-1/2 c. mayonnaise
2 Tbsp. catsup (to color light pink)
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. seafood seasoning
1 lb. shrimp, cooked and cleaned
Prepare rice according to package directions and cool. Add
vegetables. Mix mayonnaise, catsup and seasonings. Add to
rice-vegetable mixture. Add shrimp and mix well. Chill.
