1 medium onion, chopped
2 Tbsp. butter
2 c. cooked chicken-shredded
1 (12 oz.) jar chipotle salsa
6 oz. cream cheese, cubed
1 tsp. cumin
2 c. shredded cheddar cheese
8 flour tortillas
Cook onion in butter until onion is soft. Add chicken, 1/2 c.
salsa, cream cheese and cumin. Heat and stir. Add 1 c. cheese.
Spoon 1/3 c. chicken mixture on tortilla and roll up. Cover with
salsa and cheese. Bake at 350 degrees for 15 minutes.
