3 c. cooked turkey
1-1/2 c. shredded Jack or Mozzarella cheese
12 corn tortillas
1/4 c. diced chilies
1 large, chopped onion
1 clove garlic, minced
1 (15 oz.) can tomato sauce
1 tsp. oregano
1/2 c. Mozzarella cheese
1/2 c. sliced olives
1-1/2 c. cottage cheese
2 Tbsp. oil
In a large bowl. mix turkey, Jack cheese, olives, and cottage
cheese; set aside. Fill each tortilla with about 1/3 cup of turkey
mixture; roll up and place seam side down in a 9x13 inch dish in a
single layer.Saute chilies, onion and garlic in oil. Add tomato
sauce, oregano and salt. mix well and simmer 5 minutes.Pour over
enchiladas. Sprinkle with 1/2 cup Mozzarella cheese. Bake at 350 degrees
for 25 minutes. Serves 6
