2 c. rice
4 slices of bacon, cut in squares
2 tsp. butter or oil
1 carrot, chopped
1 potato, chopped
1 medium onion, chopped
2 cloves garlic, chopped
2 Tbsp. parsley, chopped
2 cubes beef boullion
2-1/2 c. water
Cook bacon and butter together in skillet; pour in rice. Saute til
golden brown. Add garlic and onion; cook 1 minute more. Turn off
heat. Stir in water, carrots, potato, parsley and bouillon.
Cover, heat to simmer and cook 10 minutes or til done. Serves 6
