2 c. fruit 2 c. chopped nuts 4 c. sifted flour 1 c. sugar 4 tsp. baking powder 2 tsp. baking soda 2 tsp. salt 2-1/2 c. applesauce 2 eggs, slightly beaten 1/4 c. oil Combine fruit and nuts. For fruit, use mixed candied fruits or individual measures of favorite candied fruits, chopped dates, raisins, well drained chopped maraschino cherries, or chopped raw cranberries and add an extra 1 cup sugar. Sift dry ingredients together over fruit; mix well. Add applesauce, eggs and oil. Stir until just blended. Line two 9x5x3 inch loaf pans with aluminum foil with extra extending over top. Grease bottom and part way up sides. Divide batter into lined pans. Bake in 350 degrees oven for 1 hour or until tested done. Cool in pan 10 minutes. Lift out by foil and cool well. Makes 2 loaves.
