2 c. sifted flour 1 tsp. baking powder 1 tsp.salt 1/2 tsp. ground mace 1/2 c. sugar 1 egg, beaten 1/2 c.pineapple juice 1/2 c. water 2 Tbsp. white vinegar 1/4 c. margarine, melted 1 c, coarsely chopped raw cranberries 1/2 c. chopped nuts Sift together flour, baking soda, salt, mace and sugar into a mixing bowl Blend egg, pineapple juice, water, vinegar and margarine together. Add liquid to dry ingredients. Stir till all flour is moistened. Mix in cranberries and nuts.Pour into loaf pan (bottom greased with margarine). Bake at 350 degrees for 50 to 60 minutes. Remove from pan; wrap tightly. Yield: 1 loaf To develop flavor,store several hours before slicing.
