5 c. flour 3 c. sugar 1 (15 oz.) pkg. raisin bran 1 c. raisins (optional) 5 tsp. baking soda 2 tsp. salt 1 qt. buttermilk 4 eggs, lightly beaten 1 c. oil Combine first 6 ingredients in large mixing bowl and blend well. Combine buttermilk, eggs and oil; stir into dry ingredients, just til blended. Cover mixture and refrigerate overnight. When ready to use, preheat oven to 400 degrees. Fill cupcake papers 3/4 full and bake for 20 minutes. mixture keeps up to 6 weeks in the refrigerator.
