GARLIC ONION FOCACCIA (BREAD MACHINE)

1 c. water
2 Tbsp. olive oil
1 Tbsp. sugar
1 tsp. salt
3 c. bread flour
1-1/2 tsp. active dry yeast
2 large onions, thinly sliced
2 garlic cloves, minced
3 Tbsp. butter
1 c. Mozzarella cheese, shredded
2 Tbsp. Parmesan cheese, grated

In bread machine pan, place the first 6 ingredients in order
suggested by manufacturer. Select dough setting (check dough after
5 minutes of mixing; add 1 to 2 Tbsp. water or flour if needed).
When cycle is completed; turn dough onto floured surface. Roll
into 12 inch circle. Transfer to pizza pan coated with nonstick
cooking spray. Cover; let rise in warm place until doubled, about
30 minutes.

In large skillet, cook onions and garlic in butter over medium heat
for 15 to 20 minutes or until golden brown. With end of wooden
spoon handle, make indentations in dough at 1 inch intervals. Top
with onion mixture and sprinkle with cheeses. Bake at 400 degrees for 15
to 20 minutes. Remove to wire rack. Cut into wedges and serve
warm. May also add fresh sliced mushrooms. Lightly saute with
onions.
