LEMON PIE

1 1/2 c. sugar
1 1/2 c. hot tap water
5 1/3 Tbsp. corn starch
3 eggs, separated
1/4 c. lemon juice
3 Tbsp. butter
Baked pie shell

Combine sugar, water and corn starch; boil 1 minute. Add a little
at a time to beaten egg yolks and boil 1 minute more. Turn off
heat and add lemon juice and butter. Pour into pie shell and top
with meringue made with the egg whites.
