6 lb. tomatoes, peeled and chopped 2 large onions, chopped 3 cloves garlic. finely chopped 2 lb. fresh chiles (any variety chopped 1/2 c. chopped cilantro These amounts are flexible; vary them to suit your taste. Place the tomatoes in a colander set over a bowl to drain away excess juice. (The fresh juice is delicious). Combine onions, garlic and chiles; then mix them with the drained tomatoes and the cilantro. Pack into clean, hot pint size jars to within 1/2 inch of the top. Seal and process in a water bath for 20 minutes or serve what you need. Yield: About 8 pints. THis sauce is a perfect accompaniment for chiles rellenos, taco or scrambled eggs.
