1 c. sugar 1/2 c.light corn syrup 1 c. roasted, salted peanuts 1 tsp. butter 1 tsp. vanilla 1 tsp. baking soda This is the same old fashioned recipe which required constant stirring in a black iron skillet. Stir only 4 times while microwaving (power level HIGH; 8 to 10 minutes total.) Mix sugar and corn syrup in a 2 quart casserole.( a 2 quart measuring cup works best) Microwave 3-1/2 to 4 minutes. Stir in peanuts; Microwave 3 to 5 minutes till light brown. Add butter and vanilla, blending well, Microwave 1 to 2 minutes. Peanuts will be lightly browned and syrup will be very hot. Add baking soda and gently stir until light and foamy. Pour onto a lightly grease cookie sheet and quickly spread. Let cool 1/2 hour. Break into small pieces. It is best to have all ingredients measured and ready before you start.
