FRIED ONION RINGS

1 c. all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1 egg
2/3 c. beer
1 large onion, sliced and
separated into rings
salad oil

In medium bowl combine the flour, baking powder, salt,
egg, beer and 1 teaspoon oil with wire whisk; beat until
smooth. Cover. Chill at least 2 hours. About 30 minutes
before serving: in a 4 quart saucepan heat 2 inches of oil to
375 degrees. Dip onion rings into batter. Fry a few at a time until
golden. Drain on paper towels. Sprinkle with salt. Serve
immediately.
