TEXAS CAVIAR

5 cans black-eyed peas
3 small cans black olives
1 large purple onion
2 c. salad oil
3/4 c. red wine vinegar
1 c. garlic, pressed
1/2 tsp. Tabasco sauce
salt and pepper to taste

Mix all ingredients well. Refrigerate 24 hours for best
results. Serve on Triscuits or a neutral cracker.
Tip: Nice gift when placed in old Mason fruit jar with
homemade stitching of the shape of Texas.
