3 c. zucchini, sliced thin
2 cloves garlic, diced
1 large onion, diced
1 c. Bisquick
1/2 c. oil
1/2 c. Parmesan or Romano
4 eggs, beaten well
1/2 tsp. salt
1/2 tsp. oregano
2 tsp. parsley flakes
In a large bowl, mix zucchini, onions and garlic togeth-
er (zucchini slices should be cut in halves or if large slices,
cut into quarters). In a medium bowl, mix the rest of the
ingredients. (Beat eggs with an electric beater until fluffy,
then add to rest of ingredients.) Pour mixture into the large
bowl containing your zucchini, onions and garlic. Fold until
thoroughly mixed and pour into a 9 x 13-inch greased cake pan
or Pyrex dish. Bake for 35 to 45 minutes or until slightly
brown on top at 350 degrees. Can be served warm or cold.
