Cut Cheddar cheese into 12 sticks each 1/2 x 1/2 x
3-inches. Flatten 3/4 cup cold leftover mashed potatoes in
your hand, place a cheese stick in the center of each and form
the potato completely around it. Continue this process until
you have 12 logs. Dust logs with flour, dip in beaten egg and
then in fine bread crumbs. Fry in 1/2-inch hot oil until
golden brown on all sides. Serve at once.
