SCOTCH EGGS
(Makes 4 Scotch Eggs)
18 oz. (500 grams) sausage
meat
100 ml. whole wheat flour
4 hard-boiled eggs, shelled
1 egg, lightly beaten
125 ml. Kellogg's corn flakes
crumbs
vegetable oil for frying

Knead together sausage meat and 50 ml. of flour. Divide
this into 4 equal pieces and mold each piece around an egg.
Roll each piece into remaining flour, then egg, then corn flake
crumbs. Fry in deep fat at about 375 degrees for 6 minutes. Drain on
paper towel and chill in fridge.
Note: Scotch eggs are best eaten with a cold tossed
salad.
