BOILED SHRIMP IN BEER

1 lb. shrimp in shell
1 qt. water
12 oz. beer
1 lemon, cut up
1 stalk celery, diced
1 small onion, cut up
2 bay leaves (I use 1)
Tabasco red pepper to taste

Combine all ingredients except shrimp in large kettle;
bring to boil. Add shrimp, cover and return to boil. Simmer
for 3 to 4 minutes; stir. Let stand with cover off of heat
for 3 to 4 minutes. Remove shrimp from liquid and cool with
cold running tap water. Drain and chill with shells on. Serve
with cocktail sauce and let everyone peel and eat.
