GARDEN VEGETABLE CHEESE SPREAD

2 c. Ricotta cheese, farmer
cheese, dry cottage cheese
or vinegar cheese
1/4 c. finely shredded carrot
1 tsp. parsley
1 bunch scallions, cleaned and
cut in pieces
1 clove garlic, peeled and
crushed
1/2 tsp. black pepper

Place all ingredients in a processor or blender. Add
just enough milk to allow the mixture to process. Serve on
black bread or heavy whole wheat bread.
