2 1/2 c. pecan halves
1 c. sugar
1/2 c. water
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. vanilla

Heat nuts (spread out on a baking sheet 5 minutes at
375 degrees). Combine sugar, water, cinnamon and salt in saucepan.
Heat and stir until sugar dissolves and boils. Cook without
stirring to a soft ball stage (236 degrees). Beat by hand 1 more
minute until mixture begins to get creamy. Add vanilla and the
