(Small Sandwiches)
8 slices white bread (remove
4 slices ham
2 eggs
plain bread crumbs
sliced Mozzarella or Muenster

Spread 4 slices of bread on dish, layer with ham and
cheese (as much as you desire). Cover bread with remaining
slices. Press sandwiches flatly with palm and cut sandwiches
into 4 quarters. Beat eggs; dip little sandwiches first in egg
and moisten well on both sides. Dip into bread crumbs and fry
after heating oil in frypan. When one side is finished, flip
over to the other side. These fry quickly and are best served
immediately and should be eaten warm. Makes about 16 little
stuffed sandwiches. Delicious! Can substitute with Virginia
ham, any leftover ham or spiced ham. We prefer sliced boiled
ham and Mozzarella.
